Recipe: Tuna Cucumber Nori Bites – A Quick and Healthy Snack

Ingredients:
1 can of tuna in water, drained (about 120g)
1 small cucumber, sliced into 12 rounds
1 nori sheets (cut into 6 rectangles)
1 tbsp low-fat mayo
6 slivers of avocado
1 tsp soy sauce or lemon juice (optional for added flavor)
1 tsp sesame seeds (optional for garnish)
6 slices pickled ginger or pickled radish (optional for garnish)
Instructions:
Prepare the tuna filling
In a small bowl, mix the drained tuna with mayo. Add a squeeze of lemon juice and a dash of soy sauce for extra flavor. Stir everything together until well combined.Assemble the bites
Place 2 slices of cucumber on one half of each mini nori sheet. Top the cucumber slice with a spoonful of the tuna mixture.Garnish
Place the pickled ginger or radish slices on top of the tuna mix and sprinkle a few sesame seeds on top of each bite for an extra burst of flavor and texture.Fold, serve and enjoy
Fold over the open nori flap, ready to serve. These bites are best served immediately so the nori stays crisp. You can also prepare the tuna mixture in advance and assemble the bites just before eating.
